Eggplant French Fries

Fries that even a Cookie Monster will love.

What you need:
1 eggplant peeled and cut into your favorite french fry shapes
1 freezer bag filled with flour, salt, pepper, lots 'o garlic salt

What to do:
Shake up the eggplant in the freezer bag with the flour mixture.
Heat a fry pan with about 1/2 C of vegetable oil. Get it up to medium-high. If it is hotter, the fries will soak up more grease.
Add the eggplant to the hot oil and brown on all sides.
Remove to a paper towel to drain off excess grease.
Then immediately transfer fries to a cookie sheet and keep warm in the oven. If you do not do this, they will get soggy and not crispy.

Soggy or crispy, they are delicious!! Aidan thought they were "real" fries.

MMMmm... quick and easy. Sounds delish! I don't know how Jason would deal with eggplant though. Leanne
